Going to make Thai red curry tonight. Had some from a restaurant last week and it was so good.
Ingredients
Sauce:
2 cans Coconut Milk
2 tbs Red Curry Paste
1 tsp Fish Sauce
1 tsp Soy Sauce
1 tbs Brown Sugar
Zest of 1 lime
Veggies and Stuff:
1 Lrg White Onion, Sliced into Strips
1 Lrg Green Bell Pepper
1 Lrg Red Bell Pepper
1 Can Bamboo Shoots
2 Celery Stalks julienned
1 Lrg handful of fresh Green Beans
2 Chicken Breasts Thinly sliced
1 small handful of Thai Basil cut into small strips
Serve with Rice (recommended Jasmine)
Directions:
1. Start rice cooking in rice cooker (or on stove)
2. Mix sauce in a wok and bring to a simmer.
3. Add the Green Beans, Bambo Shoots, Onions, and Carrot to the Sauce. cook for 2-3 min
4. Add Peppers, Celery and Chicken. simmer just until the chicken is cooked all the way through
5. Turn off heat and add Basil, give it a stir and serve with the rice
